Baked Courgette or Aubergine slices

Ingredients

·         2 courgettes (or 1-2 aubergines) – depending on the season

·         50-80ml Extra virgin olive oil

·         Good pinch of sea salt

·         Good grind of black pepper

 Method:

1.      Preheat the oven to 240˚C/220˚C fan

2.      Cut the courgettes (or aubergines) widthways into 1cm thick slices.

3.      Place in a bowl, add olive oil, salt and pepper and mix well.

4.      Prepare a large baking tray lined with parchment paper.

5.      Spread the courgette- (or aubergine-) slices in a single layer.

6.      Roast for 30-35 minutes until golden-brown.

7.      Turn once half-way.

8.      Remove from the oven and let them cool slightly.
