Pasta with Asparagus
Serves 2
Ingredients
3 garlic cloves, finely chopped
½ tsp red pepper flakes
3 dashes (80ml) mix of hot pepper sauce and sweet chili sauce
¼ cup/60ml extra virgin olive oil
1 tbsp butter or extra oil
1 bunch asparagus, thicker woody end removed, cut into 1ich/2.5cm pieces
sea salt to taste
½ tsp pepper (I like lemon pepper)
¼ cup grated Parmesan cheese or vegetarian or vegan alternative – optional
160g cut macaroni or pasta of your choice, cooked and drained
Directions
In a large pan, cook the garlic, red pepper flakes in the oil and butter if used for 1 minute.
Add hot pepper and sweet chili sauce and cook for another minute.
Add the asparagus, salt and pepper, sauté until asparagus is crisp and tender, 8-10 minutes.
Stir in cheese if used.
Pour over hot pasta and toss to coat. Serve immediately.
