Pasta with Asparagus

Serves 2

Ingredients

  • 3 garlic cloves, finely chopped

  • ½  tsp red pepper flakes

  • 3 dashes (80ml) mix of hot pepper sauce and sweet chili sauce

  • ¼  cup/60ml extra virgin olive oil

  • 1 tbsp butter or extra oil

  • 1 bunch asparagus, thicker woody end removed, cut into 1ich/2.5cm pieces

  • sea salt to taste

  • ½  tsp pepper (I like lemon pepper)

  • ¼  cup grated Parmesan cheese or vegetarian or vegan alternative – optional

  • 160g cut macaroni or pasta of your choice, cooked and drained

Directions

  1. In a large pan, cook the garlic, red pepper flakes in the oil and butter if used for 1 minute.

  2. Add hot pepper and sweet chili sauce and cook for another minute.

  3.  Add the asparagus, salt and pepper, sauté until asparagus is crisp and tender, 8-10 minutes.

  4. Stir in cheese if used.

  5. Pour over hot pasta and toss to coat. Serve immediately.
