Red lentil burgers
Easy to make red lentil burgers that taste delicious. You can pair them with salad or put them in a burger bun, there are many ways to enjoy these tasty vegetarian burgers.
Cook Time: 40 minutes Yield: 8 lentil burgers or if preferred you can make smaller patties.
Ingredients
· 1 small onion, finely chopped
· 1 garlic clove, minced
· 1 tsp cumin powder
· 0,5 tsp coriander powder
· 0.5 tsp turmeric powder
· 1 tsp paprika powder
· 625 ml vegetable stock
· 250 gr dried red lentils
· 1 carrot (about 170 g), finely grated
· 1 courgette finely grated
· 1 potato, peeled and finely cubed
· good pinch sea salt or Himalayan salt
· 10 gr fresh coriander or parsley, finely chopped
· 125 g mix of half bread crumbs and half brown rice or gram flour or more if needed
· 1 egg, beaten
· For lentil burgers served on burger buns:
· vegetables of your choice like sliced tomatoes, peppers, or gherkins, onions and lettuce leaves
· ketchup and mayonnaise or any sauce/dip of your liking like guacamole …
Instructions
1. Preheat the oven to 220°C/200°C fan
2. Sauté onion and garlic until golden and tender.
3. Add cumin powder, coriander powder, paprika and turmeric powder and cook for about 10 seconds.
4. Add the vegetable broth, lentils, carrot and courgette and potatoes and salt. Bring to a boil, then reduce heat to medium/low and allow to simmer until lentils are tender and all the liquid is absorbed, about 15-20 minutes. Stir occasionally.
5. Remove lentil mixture from heat, add fresh herbs and mix till combined. Let the mixture cool down for about 10 min.
6. Then, add the bread crumbs/flour mix, beaten egg and stir until combined.
7. Line a baking tray with parchment paper or use a silicone mat.
8. Divide the lentil mixture to form 8 patties (each patty is about 3.5 heaped tablespoons) and put them on the tray. ⁕
9. Bake for 40minutes, turning them around after 20 minutes.
10. Serve patties in between burger buns with fresh vegetables and any sauce of your liking. Or serve on its own with a salad or vegetables and dips.
Note – ⁕ Alternatively heat oil in a large frying pan over medium/high heat, and cook the patties on each side till golden/brown.
Note - Egg replacement - First method:
Ingredients: 1 tbsp ground flaxseeds - 2 ½ tbs water
Method: Add ground flaxseeds and water to a dish and stir. Let it rest for 5 minutes to thicken = 1 egg.
Second Method:
Ingredients: 1 tbsp agar flakes + ¼ cup water
Method: Let it sit for 15 minutes before use or simmer in a small pot for 2 minutes = 1 egg.
