Red Cabbage, Walnut and Apple Salad
A very nice autumn and winter salad!
Ingredients:
- 1 small red cabbage, cut very finely 
- 100-150g walnut halves, coarsely chopped 
- 1-2 eating apples, quartered, cored and chopped or grated 
- 1 small onion, finely chopped 
- 1-2 cloves garlic, finely chopped or crushed 
- ½ tsp dried marjoram (or 1tsp. fresh chopped marjoram) 
- 1-2 tbsp parsley, finely chopped 
- Juice of ½ or 1 lime or lemon 
- 1-2 tbsp cider- or rice vinegar 
- 3 tbsp extra virgin olive oil 
- Pinch sea salt or herb salt 
- Freshly ground black pepper 
- ½ -1 tsp cumin or caraway seeds, whole or ground (optional) 
Method:
- Sprinkle a little salt over the finely sliced red cabbage. Massage or pound for a minute or two. 
- Mix the walnuts, cabbage, apple, onion, parsley, marjoram and garlic together in a large salad bowl. 
- Blend the remaining ingredients together in a jar or jug and pour over the salad. 
- Let it sit for an hour to soften or serve immediately with more crunch.
