Aioli

I always wanted to use the chickpea water for dishes. This is my first trial with this aioli recipe.

Ingredients

  • 3 tbsp chickpea water (from the can)

  • 1tbsp Cider or white wine vinegar

  • ½ tsp sea salt or Himalayan salt

  • 125ml/1/2 cup Extra Virgin Olive oil

  • 1 clove garlic, finely minces

  • 1 tsp lemon juice

Method

1.     Place the chickpea water, vinegar and salt in the food processor and blend until combined

2.     Slowly add the olive oil with the motor running until it is fully combined

3.     Add lemon juice and garlic and mix.

4.     Store in the fridge until used.
