Berry Sauce and Berry Sorbet

This delicious and light sauce is very good on lemon sorbet or on vanilla ice cream served with whipped cream or just mixed with yoghurt. Grating some dark chocolate on top makes it look very attractive.

 

1-2 cups fresh (or frozen, defrosted) berries (raspberries, black or red currants, strawberries or blackberries)

1-2 tbsp agave syrup or honey

Freshly squeezed lemon or limejuice

 

  1. Place all ingredients in a blender or food processor, and puree.

  2. To achieve a very fine and smooth consistency strain through a fine sieve or leave as it is.

  3. Add agave syrup or honey and lemon juice to your taste

  4. Serve immediately or transfer to a container, cover tightly, and refrigerate. This sauce keeps very well for a week or longer.

Berry Sorbet

 

A wonderful non-fat dessert! Try pairing Berry Sorbet or Ice.

 

Method:

  1. Make Berry Sauce as described above.

  2. Place the sauce in an ice cream maker, and follow the instructions for your particular machine.

 

If you are not the proud owner of an ice cream maker, you can make Berry Ice:

 

Make Berry Sauce, place it in a tightly covered container, and put it in the freezer for 30 minutes. Take it out and stir, then return it to the freezer for another 30 minutes. This would be and ideal time to serve it, but if you must wait longer, keep it frozen until about 20 minutes before serving time. Let it sit at room temperature for those 20 minutes, and stir before serving.
